Why do they give him an injection to paralyze him? Why dont they just put him to sleep and then give him the one that stops his heart?

Because the injection doesnt just stop the heart it causes a heart attack, they paralize them to keep them still so their body doesnt fitting.

why do they steralize the needle?

Interesting point, here's a couple of ideas:

Hypodermic needles are sterilized during the manufacturing process, and thus shipped in a sterile package.

When a physician procures new needles, including the physician who administers the lethal drugs of execution, the only needles he can get are sterile needles.

Or

It's just basic ethics. Criminals they may be, but human beings they most certainly are.

Why were they granted a final favour? A last meal?
